How to apply the gelcoat? It depends on how you want it to look. Since it is on the inside, I wouldn't worry too much how "shiny" it is. Spraying or brushing/rolling it on would both work fine. A couple of things to keep in mind: You MUST remove all traces of old carpet glue. If you don't, the glue will chemically react with the gel coat in such a way as to keep it from hardening. This is a time consuming, miserable job. I've tried many things to remove the carpet glue from my current project; haven't found "the ticket" yet. While all the methods "work", they all are very messy and/or very time consuming.
Also, you don't want to lay down just gel coat. It will be very slippery when wet. You'll want to add some kind of agregate to the coat to make it non-skid. I'm going to use Interlux Intergrip. Some people use sand, but it is very unfriendly to bare feet. Intergrip is softer. Some people also use agregate that is small, rubber spheres.
To top it off, you should add a "splatter paint" look to make it look nice. Sorry, but I don't know how to do this. Good luck!
