What steelspike says is very important. Your initial suggestion is opposite what would normally work out going from alu to ss. The ss is more rigid and stronger in all aspects. This means a thinner blade with less drag, it also means the manufacturer can make a cup or taper pitch blade which moves water more efficently in the same pitch. Result, more load on the engine and lower rpm. That means you will likely go down in pitch on an engine which has the perfect alumnium prop on it. While this seems counter productive it gets you stronger hole shot and midrange while maintaining top speed and cutting fuel use through lower drag. Put down everything you can about boat performance now and experienced experts will give you guidance.
