Got a 2007 Tohatsu 9.8 today. Best way to empty gas?

I was told to unplug the gas tank and run it dry. I wasn't sure if this was good for the motor or not. I always turned the little knob by the carb in my 81 honda and it drained out. There's no knob in this one. There is a screw that's gold that is about where the knob was. Is that for draining the gas?

Yes... Running the carb out gets all but the last teaspoon out of the carb. To completely drain the carb, you can use the drain screw. Of course you do still need to have cooling water when running it out.

Yes... The drain screw for the carb on the 8/9.8 is near the bottom of the carb casting, on the outboard (starboard) side. It accepts an 8mm wrench. Don't lose the small seal washer under the head of the screw.

When engine is about to die, pull choke out/in + throttelling, repeat several times to get last drop burned and come to a complete stop. If boating frequently no need to touch bowl screw. Just play with teaspoon and final drop procedures :D

So move the choke in and out when it's about to die? Slowly or quickly?

How long will it usually take to die after removing the gas hose?

In addition, be advised that because the 9.8 sips gas so slowly, it may take 5 minutes of idling to run the carb out to where it dies from fuel starvation.

Not at all. I do it all the time with my personal 9.8. It's also part of the winterizing procedures we do when putting our customers' motors up for winter storage.

If you know that you will be running again tomorrow morning, no need to run the carb dry. But if there's a possibility that the motor will sit for a week, run it dry.

You can remove gas hose from engine before flushing to just consume what's on the bowl, plenty of flushing time. If wanting to remove all gas from line hose, disconnect from tank, flushing will last much longer though.
