I have also used your recipe before for jerky. Almost the same.
Like others I copy all of these also.
Note to self: Must try JBs ginger thing.
My two (good I hope) contributions to this mouth watering,

1: If you dont own a smoker or dehydrator you can use a modern electric oven that you can set the temp between 100-150 deg F for both and it will work great for smoking, jerky and banana chips!
2: For a quick light smoke flavor while BBQing.
Take some scrap red cedar boards (not treated) from Lowes/Home Depot
And soak them in water, wine, orange or lemon juice for a few hours.
Then place them ruff side down on the BBQ. Put the meat and veggies on top of the smooth side and cook!
Have tried both and they work great.
