holley vs carter

I am replacing the carburetors on my Chris craft 350's and was wondering which would work better?Carter 625 or Holley 600's? I am looking for fuel economy.

I am probably the only guy in the world who has never owned a Holley.

However, I absolutely love the Carter/Edelbrock/Weber. Easy, Simple, Reliable.
