Home made stews, any thoughts?

I've been doing the crock pot versions, buy mix and add sausage, some spices, chicken, carrots and potatoes - son INHALED last batch, for snacks , dinners etc. No chicken in last batch, but last night we did whole chicken($9) wrapped in foil on bbq with a season rub - YUMMMMM... and SOME of leftover in stew tonight - I low cook it for 8 hrs. The rest of the chicken will be for sandwiches - broiled w/ cheese, another favorite of mine....Would love to hear other recipies, and we're doing fine work/$ wise but it's so cost effective!

i make a stew from a family recipe. my mother called it shipwrecked stew. in a medium sized roast pan you start with a layer of a cut up onion. then a layer of thinly sliced, dollar shaped potatoes, layer of a vegetable or vegetables of your choice. i usually go with frozen corn and carrots. then i cover that with a layer of rice. then i cover all this with ground beef flattened out. pour over a can of tomato soup, and a can of water. cook in oven for around an hour or a little more at 350.

we seem to like the thicker versions, hell, that with bread and butter is a meal and all healthy.

Thanks for reminding me! I just now stuck the crockpot out by the coffeemaker so that I remember to set it up in the morning.

I'll make some chicken soup/stew. I just chuck in a couple leg quarters with water in the crockpot and cook it on high for several hours until the chicken is ready to fall off the bone. Then I remove the quarters and stick them in the fridge to cool for a bit while I add the other goodies to the stew.

Typically, I just throw in some mixed veggies, either frozen or from cans. Plus I'll stick in a chopped onion. Then season with a variety of spices other than salt, which gets added when serving. After doing all that, I take the cooled chicken, remove the skin and break it off the bones and add it into the stew. Easier when it's cooled.

I leave it all on high for another hour or two, then add either spaghetti noodles or rice, depending on mood. When the pasta/rice is done, it's done!

Healthy eating and easy too!

Start with a couple of pounds of venison cubed, into the crock pot with that, a can of whole corn juice and all, can of peas juice and all, maybe some carrots, 2 cans of potatoes juice and all. A onion or 2.

Mix it up and let it cook all day, couple of times during the day you can mix it and then add the spices you like ( wifes secret cummin ) Whatever floats ya boat with the spices. You can add some heat if you want with some hot sauce.

Boil up some rice , and spoon it on that.

Thats some good eatin right there.

I had made that up on a couple boy scout trips over a fire cooked slow all day and they fight over who's gonna lick the pan. And they knew it was deer meat.

You could if you want, with 5 or six rabbits do the same depends on how many ya feeding. More people more rabbits.

I make a version of Chile Verde con Puerco here at CBKs house..

Take a good size pork roast, or use pork country style ribs (little cheaper)
Couple cans of green chile enchilada sauce, maybe a couple diced serrao or some jalepenos.I have to tone down the heat for the women folk...Cube up the pork, throw it in the crock pot, let it go for 6 -8 hours on low....

I add a little bit of the gravy flour that thickens it up a little..

Make some refried beans and rice on the side, grab a stack of flour tortillas and ummm-mmmmm yummy! Mue bueno!

I'm in Alabama this week, but think thats what I'm making for dinner Sat night!

Oh geez am I gonna save this thread! Well the boys had the stew that slow cooked all night for breakfast! LOL :) Love seeing them eat good, recession resistant food :), I think in all I spent $6 on all?? And we have enough left for 2-3 more meals(8 cup crock pot)

Actually, my younger daughter (13- I have a 17 girl too) who is a picky eater will fuss about my faux stroganoff if I make it with beef hamburger instead of venison burger. Fortunately have hunter friends who have donated several times :)

Have to cook down about a cup of red wine with the burger and use a little more fresh garlic with beef and then she doesn't notice ;)

Red wine hmm like that idea. Let it cook down for the essence of the wine.

Wonder if beer would work too?? I like putting ribs in a wok with the ring in the bottom pour in a can of bud and steam the ribs till the beer disappears. Then onto the bbq for 5 minutes each side on high. A little materpiece sauce.

Now thats good eatin too.

But no wine or beer on Boy Scout trips hard fast rule that we enforce with a vengince.

I make my stews in a 21qt stockpot and freeze meal size portions.

Bird stew:

1 turkey or three broiler chickens.
3 large onions, chopped.
4 sticks celery, thinly sliced.
2TBS tarragon.
2TBS thyme.
2TBS salt.
1TBS ground black pepper.
1TBS cinnamon.

Cover with water and bring to a boil. Reduce to a simmer. Simmer until meat is easy to seperate from the bone and the bird(s) fall(s) apart.

Remove bird(s) to a collander.
Strain and defat the broth. (I usually put it in large plastic containers and put it in the freezer until the fat hardens, then remove the fat.)

Strip meat from bones and skin. Reserve.

Return the broth to the pot and bring to a boil. Add 1 cup brown rice and one cup wild rice. Simmer for about 30 minutes.

While rice is cooking, cut meat into bite size cubes. Internal organs are optional. I leave them out because of the cholesterol.

When rice has been cooking about 30 minutes, add a 4lb bag of California mix frozen veggies (Broccoli, cauliflower, carrots, etc.) or your choice of veggie medley. I also like to use just 4lb of frozen broccoli florets. Return to a boil for about 10 min, then add the cubed meat and remove from heat.

Cool for about 30 minutes before serving.

This is 4 gallons of a very rich, thick stew. One pint is a meal for anybody.

Ask me about my caterpillar soup. :)

5 hr stew

Beef or venison
1 can of tomatoes
potatoes
corn
carrots
peas
beans
1 can of water chestnuts (drained)
1 Tablespoon sugar
3 Tablespoons of quick cooking tapioca
salt and pepper

put all in a roasting pan and put in oven at 275-300 degrees for 5 hours.
you can use any type of veggies that you like fresh Italian bread or rolls go very good with this stew.

i've been sick for week, no appetite. But you guys are making my mouth water.

JB my mom also uses the broth, after de-fating it." Cinnamon " different.

Tasted stew down south with sugar many times.

This thread is getting saved.

I use the big crock pot about twice a week.Pinto beans and smoked ham..
Chile,Veggie stew..its all good.
Yesterday i tried something new,I took cube steak,rolled it in flower,cut up a large onion,1 can of mushrooms,1 large can of mushroom soup,salt and pepper.
Let it cook about 4 to 5 hours until the meat was falling apart in the gravy.
Serve over rice.....Man it was good.
I guess its a version of salisbury steak but better than i have ever got in a restaurant....

I just whipped up a batch of Cream of Crab soup for dinner.
All those lumps are crabmeat handpicked from this summer's harvest. I expect crab in every spoonful and my spoon to full of crab!

I don't make a lot of stews....but I make a lot of soups. I recently made some French Onion soup, but my favorite is just plain ol' chicken soup with dumplings.

Leeks, Celery, Onion, and Carrots sweated in a bit of oil, then add a gallon or two of water and a whole cut up chicken. I cook it for 4 hours or so to make a good homemade broth. Then I just take out the chicken and tear it off the bones, and add either homemade bread sinkers or liver dumplings...........and as is tradition in my family.......it is served over thin egg noodles. We use Vegetta as the main spice, but I doubt many will know what that is. Pretty sure it is European

I make my own chicken stock like this:-
Buy a cheap chicken, take off the breast fillets and leg portions and freeze them.
Put the chicken carcass and wings in a stewpot.

Add enough water to reach almost to the top of the carcass,then half a pint of red wine,2 chicken OXO cubes,worcester sauce and salt, pepper and herbs.

Bring it to the boil,put the lid on then turn the heat right down for about 3 hours.

Sieve the carcass out (saving the liquid)and pick out all the bones then put the meat back in.

Add potatoes,parsnips,carrots,swede,onions, turnips,dried peas, lentils,pearl barley and any other root vegetables lying around til the pot is full.

Add another dash of red wine and top it off with water til the veg is just covered.
Add salt/pepper to taste, and a big dash of tabasco.

Bring it to the boil,drop the heat right down again with the lid on and leave it another 3 hours.

To top it all off, serve it with suet dumplings (google 'Atora dumplings' for a recipe) and a big chunk of bread still warm from the breadmaker.
If it's rather liquid towards the end of the cooking time, don't worry as the dumplings will take a lot of that out while they cook.
