This makes 2 times now someone has told me about this recipe. I JUST put a batch in the dehydrator using this recipe (minus the fan and filters). It smells wonderful in my kitchen right now. Can't wait to taste it later!

I was wondering when someone would trot out that one. AB is my hero. That's the only show worth watching on there IMHO.

I think the only issue I see with all these recipes is that you guys are using Beef when you should be using Elk!!

So I put my jerky in a plastic container and left it on the counter last night. While we were asleep, the cat must have jumped up on the counter and pawed it into the floor like she often does with anything light enough for her to move. Then of course the damn dogs helped themselves to a nice savory beef treat. It's all gone.:mad:

BULL!!!! Sure blame the innocent cat!! Remember you are the one that has the dogs trhat climb ladder's and you found them on the roof of your house :p I bet the dogs DID NOT have an accomplice in this one. So just how much did they eat :D

Those dog's are smart but they just lack the opposable thumb. Hide your truck keys or those dogs would be joyriding while you sleep.:D

Hah! You joke Bob, but after discussing this matter with one another we have decided to agree with you. The cat, Captain Jack, likely had nothing to do with it. Anyway, I'm over it now and have made a couple batches since then. Here's a pic of what came out of the dehydrator this morning. This was 2 pounds of bottom round and it is delicious. Bottom round or London broil seems to be the way to go. I can get better slices from the London broil, but either one tastes just as good.

Now I have not made any in awhile. but now I see this I'm going to make some. this week :D I use venison and eye of round roast then I make the ground venison and add a bit of ground meat to give it a little fat. my son will make his self sick on it love to take it on our fishing trips gives us a nice little snack!!!:D But it sure does make you thirsty!!!

so how much would you say it costs you per ounce to make BEEF jerkey when buying the meat?

the going market rate for jerkey is $1 an ounce, I think.

I make DEER jerkey out of deer steaks we get from the butcher shop.
I didn't know making if from ground chuck would work. How does it not fall apart when you put it on the racks?

You can buy a screen rack from a dept or gourmet kitchen store, or you can just buy a little stainless steel screen from Lowes or Home Depot really cheap. Lay the pressed ground beef mix on the screen and put it on the rack. any ground meat works well; very tender.

For those who like venison and other game meats; athough this is not a game meat, try lamb. You'll love it:D... Talk about getting hooked!!! If your in to curry, try a little curry powder in your marinade... Mmmmmmmmm;)

As I read through this thread I was horrified when one of the posters put jerky and slim jims in the same sentence. Uck!!!!

Nothing beats home-made jerky. I too, like other posters, use ground meet and the jerky tube. The difference is that I do not do the dehydrator per say, but I prefer to smoke/dry the meat in the smoker. I have used lean beef burger, venison burger, and bison burger. Venison has more flavor in my opinion, but the wood used varies the flavor a lot. The last time I made jerky I used bison with peach and apricot wood to smoke. It was outstanding and am looking forward to more.

right on. nothing like real smoke. might be a little more involved than the dehydrator, but man, the whole neighborhood will come around to see whats cookin!!!!

Guys, Everyone is talking about using a dehydrator, but I haven't heard anyone chime in about using an oven. I have never actually used a dehydrator.

When I make jerky I either use a smoker, or use my oven. If using the oven, turn the temp down to 160, or as low as you can, leave the door cracked open and let it cook. Hang jerky from racks with toothpicks.

When I use the smoker, I keep the temp down around 140 with door shut/slightly open. I rotate between the two, the jerky can overcook quickly in the smoker if not careful. Cooks some great jerky in 5-8 hours. I usually hang the jerky the same way.

Heck, if you have a rack that will site high enough over a campfire, thats the best way to make jerky in my opinion.

Anyone ever used an old metal lined fridge as a smoker, the fire is out side in a fire box and the stove pipe is cut into the fridge?????
