Normally Full tank with Seafoam but was thinking about changing over to Sta-bil, or just stay with what has always worked for me, Full tank to keep condensation down to a minimum. I also installed a water/fuel separator too.

The recommendation to store a full gas tank during cold weather has little to do with spoilage. It's to reduce condensation so no water gets in the tank.

The colder it is, the longer it takes for gas to go bad. Sta-Bil was meant for winter storage and it works well, but I wouldn't expect it to last two years.

Also, it's not a good idea to use a gas/ethenol mix in a marine engine. Ethenol damages the fuel system.

Kinda tough to get gas without ethanol nowadays do you not think ??

Me too..I also put some ethanol treatment in the tank for marine engines..but I do that all summer long as well...

How long should gas be good for without stabilizer in it? I have a little 16' Carolina Skiff with a 35 hp Johnson that still has 2 of the 6 gallons of fuel I mixed for it almost 2 months ago (without stabilizer). Is that 2 gallons still good?

heck yea it's still good, gas doesn't spoil that fast. I would add a couple gallons of fresh and not give it another thought.

My tanks are small so I store all of my gas in the car's tank.

Well this year I will be storing the tank empty, completely totally empty..bone dry. This however probably will be the only time I do this since my fuel tank is currently propped up against a tree in the yard while I finish my transom stringer deck replacement project :) Which is about 60% complete...hopefully it will be 90% complete by next weekend :)

I store mine with about 1/2 tank of gas with Mercury Stabilizer. Its got a water seperator on it too.... no problems so far.
