..although I was pissed that local Merc dealer wouldn't sell or rent an alignment toolFishing56

Get one off Ebay. You'll pay a fraction of the cost of what a Mercury dealer would charge. If you're pulling your outdrive, you should have that tool.

Personally I replace my impeller every other year, or at least try to. If I go to the trouble of cracking open the outdrive, I'm replacing the impeller regardless of it's condition. Not that expensive and it simply doesn't make sense to me to not replace.
My outdrive is an alpha 1 gen II.

Mine is inspected and maintained according to the FSM. My having followed the factory recommendations has not failed me yet over many years.

every third time I dig a new trench across the bottom. Sometimes that just one or two trips. I'm not a big fan of staying in the channel.

I just changed mine in the boat I bought last year. The PO was a great mechanic, except he changed the impeller 10 years ago I just found out. Good thing I changed it.

I change mine every 3-5 but I like living on the edge and I monitor my gauges constantly;):D
