how to know which steering cable to buy?

1987 phantom bowrider 19.ft with a mercruiser 5.0 all i can get off the cable is detmar e6 15 foot.
I know its a 15 foot cable but what about the part that goes on the steering wheel.does it come off or??

Depends on the steering helm. There are couple of different types (rotary, rack, hydraulic, etc.). You'll need to know what kind of helm you have, and get the appropriate cable to that helm - - I'm not familiar with Mercruisers, so there may be something you need to identify at the drive end too.
