Make sure you drain the engine block, manifold and riser. Make sure water comes out of all three and use a piece of wire to clean the rust out. Rust will some times plug a petcock and not let water drain out.
Since I do not use my boat at all in the winter I pour some automotive antifreeze in the manifold and redrain. (mine has antifreeze in the engine block all the time, fresh water cooling kit).
Make sure no animal drinks the antifreeze. Make sure you start the motor on muffs so you don't contaminate the lake. Some use rv antifreeze to avoid this issue.
Some fog the engine I think this depend on where you store the boat, mine is inside and I live in dry climate so I do not generally fog the engine. When I did fog the engine I ran the engine on muffs to operating temp, then drizzled motor oil in the carb until she started to smoke, shut engine off, drain all water, and such.
grease all grease fitings, change outdrive oil.
