Kill switch

I am installing a kill switch for the Cobia boat that has the evinrude in it. I haven't bought the switch yet and I wonder if what I need to get is a normally open n.o. switch. Im assuming that what happens when the lanyard is pulled is that the n.o. switch closes grounding/killing the sparks... Are these the right assumptions?

That's correct. Magneto ignition engines have an open circuit to allow the engine to run. Pulling the lanyard or turning the key off shorts the ignition to ground. I/O or battery ignition systems are the opposite. The ignition switch and kill switch must feed power to the igntion system for the engine to run. Pulling the lanyard opens the circuit. The good news is that may of the current kill switchs are dual purpose or universal. They have both functions built into them so you wire them accordingly. Single function switches however means you need the right version.
