10 miles off the coast of wilmington north carolina trolling with cigar minows we caught 10 kings ranging from 10-20 lbs man what great eating

I like kingfish but only one way. Ball them, cut out all of the blood lines, dip them in yellow mustard, then corn meal and deep fry. IMO they are only good fresh. To me, they are extremely strong after freezing no matter how you do it.<br /><br />When I clean them, I slice vertically like I am going to steak 'em, make the cuts about 1-1/2" apart from just behind the gills to the tail. Then push the meat out with my fingers and chunks of meat we call kingfish balls pop out. Some people soak em in milk to lesson that strong flavor.

garlic salt and lemon juice takes the fishy taste right out of them :D

Ive had great success brineing and smoking king steaks to make snack meat.its like fish jerky and lasts for weeks w/o refridgerating.it is a time consuming process, but the fish is fantastic and very popular w friends.lots of recipes for brineing/smoking fish.Kings go well w spicy, peppery brines and its great w cheese and crackers.
