What manual or source would give a beginner the best step by step instructions to replace the prop shaft seal on a 1985 35hp.,Evinrude outboard?

The OEM manual for your engine from OMC will give you the best info....these are the manuals that sit on the tool boxes of Qualified OMC techs....

Re: Knowledge is power

While the Clymer and Seloc are only good for toilet paper most of the time, they do a great job of explaining the operation of outboards and outboard components. FSMs are designed to be read by outboard mechanics who already know how the various systems work. Therefore, a beginner can gain quite a bit of knowledge with the aftermarket manuals. I bought aftermarket and FSMs, which, in my humble opinion, is the way to go for a beginner.
