Does anyone know if these motors come in HP values above 35-40? I don't seem to see any that are in the 50hp to 60hp range for sale ever. I have seen the '56 Evinrude catalog which only has the Big Twin and Lark as it's largest HP motor (i believe 35hp).

The first motor larger than 40HP made by OMC was the famous '58 Fat-Fifty. The fatty was made only in '58 and '59. The V4 motors by OMC ranged from 60HP - 80HP in the early 60s, and 90HP later in that decade

The first E/J 40s appeared in 60.The motors were understressed at almost 44 cu in
and 40 hp @ 4,500. The 58,59 50s were 70 cubes and rated @ 50hp @ 4,000.
the 4 cylinder 50 was 197 lbs over 40lbs less than todays Etec 2 cylinder 40,50and 60 hp.
In 55 Mercs,Mk 55 40 hp was39.6 cubes and rated 40hp@5,400.Merc had a 4 cylinder 50 in 57
and a 6 cylinder 59.4 cube 60hp @ 5,500 in 57.

You can always go to the sticky post under Engine FAQ.That link will get you to model and HP in specific years, from the beginning.
