And don't forget water releases oxygen and Hydrogen as it burns!! Thats why we use water to put out fires!!

All joking aside, as CaptJason says, it does lower combustion temperature so it could be considered the same as raising the octane rating, but as we all know, it doesn't do anything to the octane rating, just has a similar effect to raising octane rating of fuel.

If you really wan't to lower combustion temperature and get more power then nitros is the way to go!! It does lower temperature of the intake charge (because the nitrous came from a high pressure area (its storage tank) to a lower pressure area (the intake manifold)) and it does give up additional oxygen as it burns, so more power and cooler running.. Unfortunately more power usually means more heat elsewhere!!
