left y exhaust ( helm side)hotter than right

so i’ve been in a conundrum of exhaust cooling system advice and now “here’s the deal “ to paraphrase President Biden!
both “blocking plates” from the manifold to heat risers in a 1975 351cu 233 Ford Mercruiser have been removed with a substantial increase in water flow out the exterior stern and a significant decrease in heat on the manifolds and risers (about 125 degrees after 10 minutes at 1200 rpm ) which i’m expecting will be hotter when we run her on the lake but after all this the right exhaust pipe was touchable but the left one was quite hot even though it’s riser was not. Why would that be? thanks to all who respond.
Other question: when boat goes into gear is the exhaust water not supposed to be redirected as well through the prop tunnel?
