I've got 6 X 2oz lobster tails as an appetizer today. Usually I just BBQ them, then dip in melted, salted butter with minced garlic.

I'm open to cooking suggestions.

Don't think I could make it in time! :D Saute them in EVOO and minced garlic. Toss into pasta. Enjoy.

Saute them in EVOO and minced garlic.

Then puree' them in a quart of V8 juice and use as bloody mary mix.

I have tried lobster 10 different ways and never liked any of them.

IMHO Grits are much much better.

I boil one or 2 tails then chop them up fine. Add mayo, choped celery and chopped onion, salt, peper, a dash of cajan seasoning and mix well and chill. Serve with crackers and a cold beer.

I steam mine. Just put 1 1/2 in of water in large pan , place lobster on rack and bring to boil for 15 min. Mix butter and lemon for dipping. Yum!

Actually, I'd have to honestly say I have never had grits in my life. Give me your best grits recipe and I promise to try it asap.

:D I have no idea. I might have to make them myself.
NO NO NO.

Grits are not made or eaten that far north.

You are going to have to take a road trip. (South Where it's warmer).
Anywhere south of the mason-dixon line in the US of A they will be served to you whether you order them or not.:D

They always arrive on my plate when I am at our plant in Alabama.
Most of the time they go back on my plate when I am finished :)
As said, even when i request no grits they usually arrive with my meal anyway. Nobody seems to believe that I don't want them !!!:D

Re: lobster tails...suggestions?

I do mine 2 ways , But cook them the same way , First to get the resturant look , you cut the back of the shell from the beginning of the tail to the second to last "shell piece" leaving one shell piece and the tail to hold the shell together. you then break the underside so you can push the meat back from the front of the tail and open the top to get it to lay on the shell , split the meat 1/2 way down . Or you can just cut them in half (this is what I do)

Boil a pot of water with salt , lemon and lime wedges in it (squeeze them out into the water first ), put tails in ... Forget the clock , keep boiling until the steam smells like what you want to eat . Do Not put your face over the steam simply "wave" some steam toward your nose. If you prefer you can broil for 1 min to "crust" the tops but I never do .

Melt your butter , add some lemon juice and a pinch of garlic and just enjoy :)

Also works well for shrimp and crab legs !

MMMM lobster, if they are the pre cooked ones just warm them in a steamer for a couple of minutes and dip in the butter/garlic dip.
What the heck are GRITS, is it like porridge? served in the north when cold with milk and brown sugar and a shot of cinnamon. :)
