I grew up eating lobster in New England, but since I have lived in "da bayou" for nearly 20 years, know more than three Boudreaux jokes and have several pairs of coonass topsiders (shrimp boots), I just don't eat "crawbs and such," with out some cajun seasoning. That said, to me, lobster just doesn't go very well with Zatarain's and similar seasonings. Its the one seafood that I just want to steam, boil or broil, with a bit of drawn butter, mild seasoning (if any at all) and lemon.
Now, where's my Clotilde? Cher! Let's go up north an eat sum dem big crawfish dey got! Bring da burlin' pot!
