I grew up eating lobster in New England, but since I have lived in "da bayou" for nearly 20 years, know more than three Boudreaux jokes and have several pairs of coonass topsiders (shrimp boots), I just don't eat "crawbs and such," with out some cajun seasoning. That said, to me, lobster just doesn't go very well with Zatarain's and similar seasonings. Its the one seafood that I just want to steam, boil or broil, with a bit of drawn butter, mild seasoning (if any at all) and lemon.

Now, where's my Clotilde? Cher! Let's go up north an eat sum dem big crawfish dey got! Bring da burlin' pot!

Hi Paul,
I have cut the tails in half before and placed them on the grill shell-side down. I baste them with butter with some pressed garlic (not the jar kind) and lime zest and juice with cracked black pepper. You can also use a dash of cayanne if you like a little spice.

You can also sub. the lime with lemon and/or orange. Be sure and zest some of the rind, lots of flavor in there along with the juice. Try it next time and let me know how it turns out. This can be used for any seafood. Good luck!

MMMM lobster, if they are the pre cooked ones just warm them in a steamer for a couple of minutes and dip in the butter/garlic dip.
What the heck are GRITS, is it like porridge? served in the north when cold with milk and brown sugar and a shot of cinnamon. :)
Grits are like cream of wheat cereal only worse. Sometimes they come with a pat of butter on top. Sometimes they are used for wall paper paste.:)

Ayuh,.... Being a Maineiac,....
I still Love Lobster, but as old age catches up to me, Lobster don't like Me anymore....
Last time my Love,+ I had 'em, we found out how ill equiped my kitchen was for the occasion....
This was My work-around to deal with the Issue....;)

First time I ever had lobster tail was at a family restaurant. That thing must have been in their freezer for a while because it was TERRIBLE! I just about gave up on them. Went to a seafood place and had fresh lobster... YUMMY!!!

First and only time I ever cooked tails myself, I marinaded them, skewered and then put on the grill shell side down. Basted with extra marinade I had saved (not used on the tails). Turned out good but I'm liking the idea of doing a boil.... and yes, I'm freaking starving for lobster and garlic butter now! Thanks a bunch :p

Well, I suppose if you just "got to" season them, here's one way we used to do it, "back in the day."

Bring lobsters, clams, crabs, mussels, etc. to the beach, along with whatever else you like at a picnic. Dig a big hole in the sand, collect lots of driftwood, seaweed and rocks. Place the driftwood in the hole and soak it with some charcoal fluid - not too much so as not to pollute the sand. Light the drift wood and let it burn down a bit. Add a layer of rocks and then a layer of seaweed.. Add all of the seafood and then another layer of seaweed. Enjoy the beach, while checking the goodies every once in awhile, to see how quickly it is cooking. When everything is nicely steamed ...... PIG OUT! :D
