Just my 2 cents on this.........I do a full winterize on mine also with a thorough fogging. In the spring I fire it up to flush the cooling system and let it run for a while. I then replace the plugs. I do this every year. I dont think your having a problem with the plugs if you have no driveability issues under load conditions. Just good practice to change them out after fogging. Same as fresh oil before storage.

I think you would do just fine. Make sure you have these important tools in this order........Cold six pack, good tunes, manual and oh yea some parts...

-Good tunes: check! :)
-Carb Kit: check! (will be here Monday morning) :)
-Manual: no check :(

The carb doesn't have a number on it or anything identifying it in any way. I ordered the carb kit for merc 3.0s 86 and newer from NAPA. I don't really have any other information on what type of carb it is. Anywhere specific I should look for a manual?

So I took it out yesterday without redoing the carb. It was sunny, warm, first day of summer, and we're supposed to have rain tomorrow for the next four days. No issues!!!! It ran fine, popped up fine - life is grand. When I was looking at the carburetor originally I cleaned it and wonder if that may have done anything? Or if it was just an issue of fogged spark plugs?

Today is nice as well so if it does well today I might put off redoing the carb. If not, I have four days of rain to look get 'er done.
