Now the sun is finally out in the UK, when I remove my cover and inspect the engine she's covered in condensation. Other than keeping the cover off are there any tricks of the trade or products that I can use to absorb the moisture?

Run the engine to normal operating temperature. ;)

Keep paint on it, spray it down with engine detailer and don't worry about it.

Although Zack's suggestion is more fun.

Re: Mercruiser 4.3 V6 Sweating

After sitting this year out side over the winter with just a cover on the boat I just happend to lift my engine hatch up in mid february and found all the moisture on the engine so dried it up and I just happend to have a old torn up bimini top canvace laying around and so I coverd the engine up with it till may and after a little more rain when I uncoverd the boat/engine And it was dry, So either I was to late or it worked I'm not sure this year.
