Mercury BigFoot 60 hp 4 stroke - issues turning at higher speeds

We have an older Mercury BigFoot 60 hp 4 stroke on our pontoon and have had two summers of issues running at high speeds. It was serviced over the winter and seemed to work fine. Mid-summer, there were some issues when we tried to run at higher speeds to tow a skiier or tube the kids. We had it serviced again. It worked for a bit but now cannot turn at higher speeds (20-25mph?) to make for a "fun" ride tubing the kids without a "beep" and then it hiccups and we lose speed/power. If we slow it down considerably for the turn, and then speed back up it seems fine. But, that isn't fun for our tweens. It cruises well and goes fast if you go straight pretty well. Any ideas?

Well, I have a lot of experience with that engine. It's a good one.

I have a question.

Did your pontoon sit in the water all/most the time?

Yes, it sits in the water during the summer and is stored during the winter (midwest location). We lift the motor out of the water when docked and also as the water is very shallow towards the shore.
