Working on a 2000 searay 245. Pulling the motor out and noticed where the front mounts lag down to, they look like raised pads 5" tall about a foot long, 8" wide. Not sure whats in there, but the lags are stripped out. Any idea about what product to use?

If it's like the older Sea Rays, the cores of those will be wood and/or pourable foam.

I re-did mine (the first time) by re-coring with plywood squares stacked in the hole where I removed the core, then pouring/pushing resin paste in to hold the wood blocks in place. The paste was epoxy with wood flour and milled fibers as filler. Worked ok.

If it's wet, to do it right you should core out the entire mount and rebuild with wood or foam (corecell) core.
