Need a good bean soup recipe

The wife bought a passle of those bean soup in a bag packs. Not really my thing but they're in there and need to be eat. Seems like just boiling 'em with salt and pork fat ain't going to cut it... Anybody know any tricks for these? Thanks

First make a broth. A couple of pounds of smoked pork neckbones, a large onion and a couple of sticks of celery. Simmer until the meat falls off the bones.

Strain. Remove the meat from the bones and reserve.

Add the beans and a carrot or two, sliced 1/4 to 3/16", to the broth and simmer until the beans are tender.

Add the reserved neckbone meat and season to taste with salt and black pepper.

Serve. YUM!:)

Then refridgerate it for a few days before reheating and eating. Time always seems to make those soups taste better. And like HTH says, MEAT, MEAT, MEAT.

One more thing, soak those beens overnight before cooking! This will cut the cook time down. And then put a big piece of cornbread wit em! :D

agree on soaking, but season the soaking water, if not they will be blahhh beans. or you could soak in JB's broth, then simmer the next day. but refrigerate when soaking.

Here's my 15 bean soup recipe...

2 bags of dry beans
Ham w/bone
1-28oz can diced tomatoes
1 1/2 cup of chopped onion
2 cloves garlic
juice of 1 lemon
1 TBSP chili powder

Soak beans overnight
Drain, put ham & bone in pot, cover w/water - cook 2 -2 1/2 hours
Add rest of ingredients, cook at least 1 1/2 hours

Easy!
Of course, with soup, it's easy to add your own personal touch(es).

Here is how Anita does it.

Buy dried peas, barley,wheat.
Soak overnight.
Rinse
Add to stock from: cooking corned beef/silverside (let it cool so you can take fat off top 1st), or chicken carcase, or beef bones.
Put in plenty of coarse grated vegies...carrot, Kumura, pumpkin, swede, turnip etc.
Season
Simmer for a couple of hours.
Use a really big pot, so you can fill plenty of used Chinese take-away containers to freeze for later.

Big bowl of that and a few slices of not-quite-burnt toast and it is a good meal....cheap too...love it.

I'll cook maybe 10 pots of beans a year. One of those will be for a cookoff. Take a muslin (cheesecloth type bag) with about a teaspoon of pickling spices per bag and cook it with the beans. It'll add a flavor different than any other you've tried.

I do something almost the exact same as Mthieme also. Always turns out great.

Spots....from Anita.....
grate it in the kitchen whiz with the coarse plate.
If you boil it flat out, the veg goes mushy...simmer slowly.
Someday try the soup mix of split peas and barley etc....from the bulk stores."

Man, I love bean soup and fix it a number of different ways. My only advise is stay away from any open flames after you've polished off a couple bowls. :D

Here's mine: The next time your wife cooks a ham, save the bone with a good bit of meat left on it. In a big pot, put:
Ham [Remove and pick meat off after about an hour]
Navy Beans {Dry}
Cut up white onion
Can or two of Rotelo Tomatoes With Chilies
Cover with water and cook several hours {if you have pre-soaked beans overnight]. Check the beans after a few hours to see if they are soft enough for you. You can adjust this recipe to suit what you like- more onion for example. It's never made a bad batch for me.

When soup is finished, I'll take approx. 2 cups (depending on batch size) of soup and put through blender and add back to soup pot. It adds body and smoothness. A cold damp rainy day, hot bean soup and warm sourdough bread, what joy!
