need help wiring 1977 evinrude 175hp on 17ft Glastron

Clymer manual says that the engine puts out 10-35 amp regulated charge from the alternator and I've been trying to figure out how to wire in an ACR and battery switch. Problem with this boat is everything has been cut and replaced once upon a time. It's a rats nest with nothing fused. I also would like to install an 8 fuse panel to hook up the house battery switches and accessories.
I can't figure out where to start. I have a general idea of what the wiring should look like, but I can't figure out what the negative bus bar ampere's should be, what gauge wire to run, and what size main circuit breaker I should use. I've seen some very nice diagrams on this site that Don S has made, but they were for a smaller 85hp engine. I've been trying to figure out how to use the same diagram design but for the electrical requirement difference between the 85hp engine diagram and the 175 engine that i have.
I've looked at too many diagrams at this point that my head is spinning. I could really use some help.

I guess I need to know if I’m wiring for the stator ampacity or for the load requirements. Don’t know what the wire guage sizing is based on. Both? It’s a typical bass boat with lights and pumps and stuff, no power inverters running coffee pots or anything. Isn’t it the case that the motor would only affect the re-charge rate on a house battery and the cranking amps on a start battery. So why is there such a difference between the amperage of breakers and gauge wires and ampacity of bus bars?
