New to me Yamaha 50hp 4 stroke, should I be worried?

Just bought a 17ft sea nymph with a newer Yamaha 50hp 4 stroke

Boat sat most of last year, I bought it home, and cleaned both fuel tanks but that's about it before putting it in the water.

Boat runs FLAWLESS besides one time when I started it at low speeds it was bucking/missing but for the rest of the day which was about 8 (most was fishing with the trolling motor) hours it wasn't an issue at all and it ran like a clock

Just ran the motor for getting me to spot to spot only put an hour on it.

Should I worry about that 1 issue or chalk it up as it "clearing itself out"

I do plan on changing the spark plugs/fuel filter.

I already blew the fuel lines out from the engine to tank

Definitely do a tune up. But at the same time, not knowing the age/condition of fuel sitting in the tank, I would probably drain it, dry and clean the tank as much as possible and refuel with clean, fresh non-ethanol fuel.

There's nothing to tune up, and he already cleaned the fuel tanks.

​OP, just go boating and see if it acts up, if it does then clean the carb.
​You may also want to put in a new water pump impeller before you run it much..

Yep, I have new spark plugs and impeller in my hand, just need to install them.
Are these typically reliable motors? Good for a few thousand hours if maintained properly?

I have a F60 Yamaha four stroke. Have owned it for a couple of years and have never had a second of trouble with it. I missed where you had cleaned the fuel tanks. One thing to consider is adding a fuel/water separator. Yamaha's motor mounted filter does not have the micron rating they recommend. It is intended to be a backup for a filter mounted in the fuel line. Search vapor separator tank also. There is a filter in it that can become clogged. There is videos available to show the method for draining it, which may show some sediment there.
