noobie questions about my outboard

It's a late 80's/early 90's model Mercury outboard, tiller, 2-stroke 7.5 hp. (although I don't think this matters concerning the questions i have).

...(sorry, don't know the year/model)

This is my first outboard motor, it seems to be in decent working condition, when I get it out on the lake, it runs really well. But, in order to get it up to speed I have to slowly bring the throttle up to full. If I throttle too quickly the engine revs as if it's in neutral and I have to bring it all the way back down to let the gears re-engage (at least that's what it seems like it's doing).

I want to know, is this common with older 2-stroke engines? I would say it takes me about 2 to 3 minutes of slowly increasing the throttle to get to full power. 3 minutes might not sound much, but try taking that amount of time to throttle up your engine (from idle speed to full) ...when the fish are bitin' it's an eternity!

Also, if takes me 8 to 12 pulls to get my engine started, did I buy a 'bad' used engine... or, is that typical of an 2-stroke outboard that's 15 years old?

Few thoughts:
-Get a service manual (I like Seloc or Mercury factory) and maybe an owners manual off ebay
-I think maybe your rubber hub in your prop is slipping. If you take the prop off, you can see one end of the rubber sleeve between the prop hub and the splined sleeve. Check to see if it looks chewed up. You can get a new one pressed in at a prop shop.
-I like the following method to cold start a 7.5:
a.pump fuel line bulb tight and pull the choke out
b.pull the pull rope slowly to roll the motor over 8 to 10 times.
c.pull the rope quickly and when the motor starts, push the choke in very quick.
