Need some estimate of a consumption figure that I probably won't exceed for sizing a fuel/water separator. I'm running a 4 cyl 115hp johnson. I'm looking at a 30gph unit, and a 60gph unit. I think the 30 would probably be adequate, but I'll probably end up with the 60 because it's only $5 more. Will I be OK either way?

30 is way more than enough. Kinda doubt you would use 30 Gal per hour. But if the 60 is only 5 bucks more, go for it.. You may use between 12 and 15 Gal per hour with that motor.

a good figure is you use 10% of your hp in gph at WOT so your 115hp would use about 11.5gallons per hour, max..... and it always works out to be 99% true

All depends on the boat and age of the motor. Nothing is set in stone, but the 10% rule is what most go by. I kinda doubt a 77' 115 will get the same GPH as a new, for example, Yamaha 115. But hey, drive it and enjoy it. It's one of lifes little pleasures...
