omc stinger with 305 chevy wont restart after run

I have a 79 OMC stringer drive with a 305 chevy. After pulling the kids on the tube for over an hour with no problems. We will even turn the engine off when we switch riders. The problem occurs when we stop and swim for 30 min or so. The engine will crank, but will not restart. I can get it to start if I have the throddle way forward in nuetral. As soon as I throddle back to put it in gear it will immediately die. I put in a new dual point distributor this year and the carb was replaced new last year. I Brought this boat back from the dead and feel I am so close to being able to enjoy this thing. Any ideas would be greatly appreciated.

I believe I had the electric choke hooked up to the wrong side of the ignition switch, thus keeping the choke open when the key was turned off. the ground wire was also disconnected. I have attached the power to the choke to the alternator. Can anyone tell me if they believe this could be the reason for my problem?
