Below are pics of the two tires on my boat trailer, in one there is a part missing that the grease goes in. What is the part that is missing called?

Bearing Buddy is the common name for that part, although it does not really look like a bearing buddy. They usually have a spring loaded plate that has the grease fitting in it and you put just enough grease in it to keep pressure on the hub. You definitely need to pull that hub, clean and inspect the bearings for damage then repack, reinstall with new seal and bearing buddy.

Looks like they both need more than a cap, a bearing buddy, or a cover.
THey need maintenance.

Looks more like E-Z Lube hubs to me. Google E-Z Lube and get some info on them.

E-Z Lube Hubs do not have cotter pins.
The Zerk would be on the end of the Spindle right by the spindle nut.

They look like "Kodiak Red Eye" style hubs.
