Optimum engine temp?

I just purchased this boat so I don't know history, it's a 25ft tahiti daycruizer 1980 with a 454, I now it depends on what thermistat is in the engine, it runs between 175 and 180 is this normal or optimum?

What kind of cooling system is the engine using, closed or raw water?

Those temps sound high to me, for raw water cooled, no?
