I have an 1969 Evinrude 85HP outboard. I just installed a engine temp guage on it and I would like to know what the proper operating temp is after the engine is warmed up?

Depends on where you mounted the sender. There will be a considerable difference, even if only a few inches away. The thermostat opens at 140 degrees, but that is after the water has gone through the system. Until it opens, the water keeps recirculating till it reaches 140 degrees. The 'stat is constantly sensing the temperature and opening and closing as necessary to maintain proper temp.
