Is it ok to paint the bottom bracket of the engine that remains in the water after the engine is tilted up? What is the optimal time to paint the bottom of the boat prior to launch? How many days can you wait for best bottom paint protection?

Just do not paint the zinc.

With today's paints just follow the instructions closely. The cure time I would expect will be 12 to 48 hours depending apon the product used.

Also make sure there is no copper or magnesium in the paint. That will corrode the metals faster.
