Paper wheel knive sharpening UPDATE

Has anyone had any experience with the paper wheel knife sharpening system seen here?

I sharpen my knives with a cotton buffing wheel and rouge stick. That is, after using the Arkansas stone. System's been around a long time. My Dad showed it to me in the forties. That is how he kept the edges on his straight razors.

Was that a spiral sewn cotton wheel?

Or a loose wheel like this

I use a work sharp does a good job,

I've seen people use the flap wheels with Good results. Personally I use super fine grit belts on a harbor freight belt sander, and polish the edges with a leather belt and some rouge. My edges come out scary sharp, to the point I warn people when they borrow my pocket knives.

I use this for my Wusthof Kitchen knives:

Takes a while to do it. Always thought about going the paper wheel way though.

I don't think the guy in the video does it right. He should be turning the blade around every time he runs it along the wheel. I am sure the bevel isn't the same on both sides.

The problem with the system I psted in the pother post is that its super slow.

My sister and her husband are wood carvers and they use the paper wheels. I'm not sure if it's this system precisely but it does a great job.

+2 If you have a burr, then you've rolled the edge over. Not good!!!

That looks like the paper wheel system. I just ordered the one linked to in my first post. I report back after the initial use.

+1 ^^....and lightning fast. The 3M mylar-backed micro-abrasive belts are the best I've found.

I can shave with my axes.

Well I received the sharpening kit and installed it on an old bench grinder. Note, in order to use a 6'' grinder you must remove the wheel guards.

I glanced over the instructions and had at it. My first attempt was on a small pocket knife. After several attempts I managed to put an acceptable edge on it. I then went on to a kitchen knife. With less than a minuet of working time it was sharp enough to cut a ripe tomato into paper thin slices.

After sharpening several more kitchen knives my technique improved to where it took less than 30 seconds to achieve a great edge. I did notice however the "dressing" wheel had lost most of its abrasive. I believe this was from my overuse of pressure on the first few blades I attempted to sharpen. I used it more like a grinding wheel than a light dressing wheel as intended.

That said the kit contains additional "grit" and instructions for resurfacing the dressing wheel. All and all it works great and will save me a bunch of time while keeping my knives up to par.

Yeah, LT. It would help if you move your grinder into the kitchen. Otherwise you will seldom use it. I have had one of those setups out in the garage for ?15 years. I'd much rather grab my ceramic rods than to thread my way through the garage to get to the grinding machine.

Yeah, LT. It would help if you move your grinder into the kitchen. Otherwise you will seldom use it. I have had one of those setups out in the garage for ?15 years. I'd much rather grab my ceramic rods than to thread my way through the garage to get to the grinding machine.

Not an issue for me. Attached garage just off the kitchen. It will take longer dress the knife edges than to walk to and from the grinder.
