Pitch high or power low?

My boat is a Striper 2300 with a 200 Oceanpro. It came with a 15x19 but a bit banged up and with the numbers unreadable. The maker suggested a 15x17 replacement, but when i got it on I felt like iI was in first gear and it seemed to me I was screaming around with no traction and low speeds would be very uneconomical.
It was my first power boat and I gave up that test without doing anything sensible or writing anything down.
I got another 15x19 and it feels and sounds good but I can't get close to 5000rpm, although I can easily do my favored cruising speed ( 3750, 20 knots in open Atlantic trade winds).
My question is how do I find out if (1) I need a prop somewhere in between or (2) My motor is not making spec power?

Need more details.How about some rpm and speed w 17"
Also the feel of the hole shot with each. Al or ss props?
Seems unlikely you would go from overrev to lugging in 2".
If you changed brands/material and sizes it might account for it.
It does seem an 18 may be in order but I think I would check that the motor is in excellent tune before making any changes.In my opinion that while the 17 or 19 may not be right they would be would be close
and not in the extreme either way.

Yes. I'm going to put back on the 17 and do a proper test. I'll report back

with your 15-19 prop if you were to drop 1in of dia that would give you 400 more rpm at WOT. on that set up if im not mistaken we use to rig that boat and motor package with a 14.25 by 19 and they would top out at around 40mph at 5200rpm some would do 42mph at 5400 it just depended on the motor, and those were rigged with omc sst props
