yeah, i would definitly rather have an engine that I know the parts have been carefully selected to make the scr and dcr where they need to be along with the proper quench rather than having some shops warranty. Most likely they are going to fight you on the warranty and only cover maybe half of the cost of repairs anyways. Is towing covered in the shops warranty? If it blows up its not going to be in the driveway! Does that shop have a tow boat that they will launch for their customers 24 hrs a day? There is not one engine out there that I would recommend building with a full dish pistons when d shaped cup pistons are available.
I would also be very careful when selecting a marine head gasket. I'm pretty sure most of them are around a .051 compression thickness which is going to affect your quench. Not sure where you live but if only running in fresh water automotive gaskets are fine.
And if you go to a shop and their selling point for a set of pistons is that they are not directional and can be placed in any bore, turn around and walk out the door!
