I have an older tube and the grease is a very dark green color. Recently bought another and now the grease is light brown/beige. Just wondering if the new one is ok. Has another one else seen this?

Mercury / Quicksilver dont make grease , they put their brand name on grease ( and other stuff ) they dont make . My guess would be that they have changed suppliers since you bought the 1st tube ....sure doesnt mean there is anything wrong with it . Mercury / Quicksilver are not going to put their name on a crap quality product . They will however charge you more for it .

Grease color can vary depending on the type and age. If the new one is lubricated properly and there’s no sign of contamination, I wouldn’t worry too much about the color alone.

the only time I'd be concerned about this is mixing grease bases that aren't compatible, you can look for a chart online that tells you which grease bases shouldn't be mixed. I try to start with one and stick with it so it doesn't become an issue. I use Lucas Marine (blue grease) for trailer wheel bearings, the gimble bearing on the I/O and I use Evinrude Triple Guard on the splines on the driveshaft because it seems to hold up the best of all the greases I've used. I use it on the prop shaft as well and on the shift linkage, and other sliding surfaces. Even after the boat is in the water all season when I pull the prop at the end the Triple Guard is still on the prop shaft! Very water proof.

yes used to be green now more of a translucent yellowish brown. This used to be called 2-4-C then changed to extreme grease label. So no issue the grease you describe is what you need.
