You guys who are Cutting Off the Heads are Wasting the BEST part of a Trout........

I My Book,..... Trout are Cleaned by slitting them from the Anal Orifice thru the Lower Jaw,....
Then All the Entrails,+ Gills are Pulled Free,+ the carcass is Washed......

They're now ready to Cook,... Whichever way you care........

When Done,..... The Skin Easily peels off,+ the Meat pretty much Falls from the bones...........

Oh Ya,.........
And, the BEST piece there IS,.. That you'll be Missing if you cut the Heads Off is the,......

Trout Cheeks..............

With your 12" to 15" fish,........
There'll be a Nickle to Quarter Sized Trout Cheek on each side of the Head............

Those 2 pieces are Pure Heaven............ ;)

Re: Rainbow trout???

When I was about 8 I caught a bunch of trout with my friend. My dad BBQed them with the heads on. My grandma lived with us because she needed constant care. She couldn't see very well either. While we were eating the fish somebody noticed grandma was crunching on something. It was the jaw. She'd already cleaned off most of the rest of the head.

I still can't eat trout....

So true.I like them best when done in butter.Make a carmelized butter sauce with grated almonds and whole almonds.Pour the sauce over the fish just before serving and the only thing lacking with this godly dish is some semi dry white ambrosia.

Thoae are some tasty ideas, icut 3 up in 1.5"thick peices and rolled in cajun seasoning and deepfryed, while that was waiting i took 3 more and sprinkled with garlic powder salt and pepper, and lemon juice wrapped in foil and cooked.they were very good,so far i liked the fryed.but im going to try the other ways here soon, now that i got a supplier for some fresh right out the river trout. :)

Probably eat my weight in trout every year. Rainbow, Brook and German brown, there all good. Best tasting seem to be the browns, eight to ten inches, dredged in cornmeal and pan fried for about three minutes a side.

Living in California gives me the opportunity to fish for trout all year long!
