Now i do a bunch of wings so I'll jump on that. Put on the egg in a rotisserie basket with lots of wood chunks.

We are doing Joe's Mexican Buffet for out Thanksgiving and doing a traditional Danish pork roast for friendsgiving but I'll see about Christmas.

. I even use this brine recipe for wings. Do a bunch at a time, dry rub them after brining, and vacuum seal them before freezing. Thaw 'em out, and toss on the smoker when I have a craving.

Was going to do one bird till my oldest daughter told me her husband invited his family to their house for Thanksgiving. She has never hosted a family meal like that and was freaking out. Asked me if I would brine and smoke a bird for her … so gotta prepare for 2 birds in the smoker this year …

Can you smoke a turkey stuffed with dressing? I would like to do one on my Traeger but I prefer a stuffed bird.

I decided to instead of putting a turkey in a bag with the brine in a bucket I will put a few 5# old steel plate weights in a 1 gallon zip lock bag place the weight on top of the bird to hold it to the bottom of the bucket.
