Removed rear seats. now what

Hello I have a 23 ft hourston glascraft. I have removed the rear seats to gain more fishing room. and would like to build a bulk head like the one in the second photo. in the other photo is what I have done so far. Basically copying the second pic. I will be painting the new bulk head not gel-coating as is in pic 2..

So correct me if I am wrong here ( first time)

step one..cut out ply wood and dry fit it

step two.. using epoxy resin mixed with acetone wet out the wood

step Three... not sure what to do next do I let that set up then install.. and then more epoxy mixed with a thicker to fill in the gaps ???

Ayuh,.... I made curtains to do what yer doin',....

Whatever ya do,... Make Sure it's Easily removable for servicin' stuff inside there....

yes it will have removable doors. not getting any info here. Guess I had better do some more reading.
Will talk more later
