Couple of ways to do it. You can just beach it on the ground and then winch it back up by pulling it off the boat by securing the back of the boat to something strong enough to hold it as you pull the trailer forward and let it drop down onto some old tires/etc.
Or, there's the more complicated method of keeping the boat jacked up in the air on blocks of wood, etc so that it is more level with the trailer when you put it back on.
Personally, in your situation, I'd just take the boat off the trailer and put it on the ground with the motor tilted up all the way. When you put it back on the trailer, leave the trailer unhooked from the tow vehicle so the trailer can raise up to the level of the boat bottom as it is winched back on to avoid putting too much pressure on the front of the hull.
I've done it this way a few times with my Glastron hull ( no motor though ).
