Roast very very slowly, with low heat. This will allow roast to heat through at an even temp throughout. You will not overcook the ooutside before the inside is hot. Use a thermometer, don't overcook. This is a steak in roast's clothing!!!

Season the heck out of it with all your favorites.
Remember, these seasonings will only be on the outside edges when you slice it, so you can over apply spices with no ill effect.

I personally use an electric roaster for roasts,
but a good old roaster pan in the oven works well
also. very simple, cook it on low heat for a long time.
if you like it med. rare, about 20 min/lb. at 300
in a preheated oven, 30 min/lb for medium.
I don't like to cover the flavor of a good roast
with anything more than salt/pepper.
some cleaned taters, carrots, onions, celery
thrown in the pan and your done.
oh and it's a good idea to tye it with string
before you throw it in and put it on a little
roast rack so it's not laying on the bottom of
the pan.
you'll be shocked how much it shrinks!
enjoy!
M.Y.

if you use the roaster pan in the oven, don't
forget the lid! you probably already figured
that out, but hate to see a beatiful roast ruined.

1. Tie it up
2. Roll in salt, black pepper and a little garlic powder
3. Sear all the outside fast it in a big, hot iron skillet
4. Roast as above

c/6

Hooty

Hooty's got the ticket.Searing the outside first will keep the juices within the roast while cooking. You can always tell a good beefeater when you hear one.
