The vertical spray of water is a Yamaha trademark. They call it the "Visibility Spout". The purpose is to make the ski more visible to other boaters, and it works pretty well for that. If you want one save your money for a Yamaha.
SeaDoo, Kawasaki and Honda will be the skis that you see that don't have it. Plus some Yamaha guys will occasionally shut it off to prevent spraying people they tow.
