seat backing seal or not

I have just started a project on my 1978 Viking Deck Boat. I am wondering what I should seal the 1/2" kiln dried pressure treated ply I used as seat backing. (The captains chair is 3/4" on the base). My first option was going to be epoxy paint simple and realitivly inexpensive. $35.00 Gal. The stuff you would use on a wooden porch floor. Then I started thinking about using resin to seal it. I called my supplier and was told that resin is not waterproof and I should try gel coat. This brought me full circle now I am wondering if it would be better just to leave them unsealed with the thought they would dry out better when they get wet.

Thanks for your thoughts.
