yes you can make smoked fish in a dehydrator. My favorite way of doing it is liquid smoke 2 splashes, dark brown sugar, and soya sauce to taste

First batch seems pretty good. I used some salmon that was vacuum packed a year ago...some Reds from Alaska. What are some of the better varieties of salmon for this or does it matter?

Smoked sockeye is the best IMHO, but all are good.

Okay finally smoked the fish used the 1c salt, 1 cup brown sugar, cleaned all dark flesh from fillets, cured for 24 hrs, then fan dried fish for 2 hrs smoked for about 3 hrs with alder wood. It is very good I like it, and would do again. Thank you for all the replies.

recipes can also apply to other fish.i particurally like smoked whitefish.hmmm candied whitefish.

LOL dang only after giving brother some, some for his son-in-law only enough left for Christmas in 2 weeks
