Christmas dinner and how was it. I cooked a 15# standing rib roast and Greek Green Beans. Everything else was supplied by the rest of the family. It was a feast!!!!

Ham, mashed potatoes, sweet corn, green beans, and macaroni and cheese. With butterscotch pie and home made fudge for dessert.

Everything was great!

Pretty simple dinner - turkey, potatoes, green beans and an exceptional cranberry relish - But the gravy the Admiral made deserves it's own food group! 'Twas a good meal.

I'm a turkey man too. Turkey, taters, sweet taters, corn, stuffin, gravy......oh man!! Peanut butter pie used as a mortar to fill in the gaps. I'm still stuffed!!

In Newfoundland, where the Admiral is from the traditonall meal is something called Jigg's Dinner. It consists of potatoes, carrots, turnip(rutabaga), cabbage, peas pudding and salt beef, and a second protein used for gravy.

To cook it you need some salt beef (cured navel beef). Boil that to get some of the salt out. Pour that water off, but don't throw it out. Put some yellow spilt peas in a white cotton bag tie it up loosely and suspend that in the pot just above the bottom. Fill the pot about 3/4 full and heat to a boil with the beef and peas pudding bag. Put in a head of cabbage cut into quarters, but do not remove stump, (this is what holds the head together) wait 20-30 min depending on size of cabage head, put in turnip(rutbaga) that has been cut into slices(about 5/8" thick and peeled). Wait another 30 and put in carrots another 30 then potatoes. When potatoes are soft meal is ready. Remove contents and place in separate dishes. Mash turnip and put in a PINCH of sugar. Mix butter and a little peper into peas pudding until smooth and creamy.

If pot boils down, add some of the original water you saved earlier.

Remove turkey from oven and carve. Use drippings from turkey for gravy. Sit down with family and Enjoy... This can also be seved with a beef or any other protein, since it usually only for gravy.

This is a traditional meal in Newfoundland. It sounds like a stew, but all ingedients are served separately. It is served usually on Sunday around noon, since it is a large meal, then the rest of the day is spent with family because most everybody is too full to move very far.

It is difficult to describe but is actually a delicious meal.

I mesquite smoked a turkey (it was so juicy and tender that liquid squirted out of the bird during slicing. Also cooked a honey cured, spiral sliced ham and made an apricot/honey glaze for it. Then there was the smashed taters, green bean casserole, stuffing, fruit kabobs, and gravy. To finish off the meal was Cheesecake Factory cheesecake, peacan pie, Nieman Marcus bars, and peach cobbler, all served with a hot cup of Kuai's Plantation Estates Dark Roast coffee! The King wasn't eating any better than that, my friends!

I'm still full. We had BBQ ribs, grilled Salmon, garlic and parmesan roasted potatoes, fresh green beans, rolls and for desert, Tiramisu.

It was delicious.

Hope everyone had a Merry Christmas.
