I have finished designing and building the back seats. They are built of plywood and aluminum.
The middle section is built like a small cabinet. It uses 5/8 inch ply for the sides. The top is notched so it can fit under the splashwell.

The panels were painted black and the bottom of each side was epoxied to protect if from sitting on wet carpet.

Vinyl was attached and the back and bottom were edged with aluminum.

The sided of the panels were cut to account for the bevel in the side of the boat.

This last picture is of the back of the seat being cut to shape.
