how hard to replace the whole steering on my 1979 sea ray cabin crusier, some parts are so hard to get off

Welcome to iboats.

It really depends on the type of system you have in place now.

Many people just replace the cable (which is the piece that most often goes bad) and some even add a new steering wheel.

How hard all depends on how/where it is routed and what else got zip tyed to it.
