I'd try to set the anti-cavitation plate to even with or less than 1" below the bottom of the boat. However, 2" is probably not the problem. The bow is going to jump. It is afterall just a rubber bag of air with a motor. It sounds to me like it is behaving pretty much like any other inflatable I've used except it should plane a little easier when you are alone.
Moving your body forward as you steadily accelerate should bring the bow down quickly. Could be that I'm heavier than you (210lbs) and my weight drops the bow faster. When you are alone in the boat, try sitting as far forward as you can when you start out and move back once you plane out. Also pack all your gear and fuel tank in the bow when you are alone.
I tried to look at your boat, but I can only see the front page. The boat on the homepage looks good. Are you from the province of Ontario or one of the many towns called Ontario?
